Dan Schaaf and Arron Olson, two self-described old punks, are heading into their 10th vintage. They make a range of clean, tasty wines working with a variety grapes from different parts of the state.
Vineyard: Twenty-something-years old.
Farming: Practicing organic.
Vinification: Fermented in flex egg, tank and aged in neutral oak barrels. Natural malolactic. Unfined but filtered.
Tasting Note: With snappy, crisp stone fruits, this is of the best under $20 around.
Food Pairing: Poached salmon, salad with grilled peaches or nectarines and goat cheese.
